About this collection
I do not use standard gas ovens for your appetizers. We bring a portable charcoal grill to your venue, because that smoky flavor is not something you can fake. It is the difference between a standard snack and the dish your guests will actually remember.
There is a massive difference between appetizers cooked in a commercial gas oven and those kissed by charcoal flames. At your event, my team brings the heat directly to the venue. You will smell the difference the moment guests walk in.
The Tandoor Setup
My live stations focus on authentic North Indian styles. We work with marinated paneer, vegetables, and mushrooms that need high, direct heat to char properly without drying out. This technique ensures that your Paneer Tikka arrives at the plate juicy and smoky, not rubbery. Whether you are hosting a wedding in Mumbai or a celebration in Alibag, we ensure the equipment handles the volume without losing that signature char.
The Bread Station
A great curry is only as good as the bread served with it. I skip the frozen, factory-made items entirely. My bread station features:
- Wallpaper Naan: Stretched thin and cooked in the traditional clay tandoor.
- Peri Peri Kulcha: A modern fusion twist that brings a spicy kick to your meal.
- Flaky Parathas: Layers of dough cooked on the tawa for that crispy, golden finish.
We set up these stations to be interactive. Guests get to watch the dough being slapped onto the tandoor walls, which adds a visual performance to the dinner service. It turns a standard appetizer hour into a live culinary show.
