Classic Street & South Indian Live Setup
Chaat Gali (Street Food Lane)
- Setup: Themed counter with signage and golden ornate spherical displays for puris.
- Live Preparation: Includes Pani Puri (Mint/Spicy and Sweet Tamarind water), Dahi Bhalla with saffron yogurt, and Karari Tikki fried live on a flat tawa.
- Items: Also includes Ragada Pattice or Samosa Chaat with hot gravy.
South Indian Live Station
- Atmosphere: Staff dressed in traditional South Indian attire.
- Lava Idli: Signature steamed idlis with a sambar core that flows when cut.
- Live Counters: 3 to 4 varieties of Dosa (Plain, Masala, Mysore, Cheese) and Paniyaram made in cast iron moulds.
Standard Mocktail Bar
- Setup: Lighted acrylic bar counter.
- Drinks: 3 syrup-based varieties such as Blue Lagoon, Virgin Mojito, and Pink Guava with chilly rim.
- Service: 3 to 4 hours of continuous service with ceramic or melamine quarter plates.

Pan-Asian & Teppanyaki Live
- Teppanyaki: Chefs perform live grilling on high-heat flat iron plates.
- Menu: Exotic vegetables (Zucchini, baby corn, broccoli, bell peppers), bamboo basket steamed Dimsums (Truffle/Crystal), and Thai Curry bowls with sticky rice.
Charcoal BBQ & Breads

- Preparation: Green tea base infused with saffron, cardamom, and cinnamon, topped with almonds and walnuts.
- Service: Poured by staff in traditional Phiran attire into small glasses or kulhads.

- Chaat Gali: Chaat ka pyaar kabhi kam nahi hota (Love for chaat never fades). I set up a live chaat station with Pani Puri, Dahi Bhalla, Karari Tikki, and veggie skewers - all made just how you like.
- South Indian Flavours: Dosa, ‘Kulfi Idli’ on a stick - all cooked live, smells and all.
- Asian Grill: Teppanyaki, Thai curries, Indonesian dimsum - sizzling action, bold flavours.
- Barbeque: Paneer Tikka, Seekh Kebabs, and more grilled hot over coals.
- Live Bread Baking: Ulta Tava breads like Wallpaper Naan and Peri Peri Kulcha.
