We don't just swap out ingredients; we rethink the entire process. Our vegan pizzas use a creamy, house-made cashew cheese that melts perfectly in our 400°C brick oven, paired with our signature 72-hour fermented sourdough base.
When we developed our plant-based menu, we wanted to ensure the experience matched our original wood-fired offerings. It starts with the base: our 72-hour fermented sourdough is naturally dairy-free and gets that distinct leopard-spotted char in our brick oven. For the toppings, we have moved past basic veggies. Our chefs prepare a cashew-based cheese that brings that rich, creamy texture without using any dairy. You will find this on our signature pizzas, and yes, it holds up beautifully under high heat.
Beyond the main course, we have you covered with salads featuring house-made vinaigrettes and even vegan desserts. Our vegan cheesecake and chocolate mousse have become regulars for a reason.
