Whether it is the tangy chickpea masala or the homestyle vegetable curry, the base is designed to keep the moisture of the dhaba-style gravies inside, so you get a full meal experience rather than a quick, dry snack.
Finding a vegetarian roll that does not rely on frozen ingredients or bland sauces is difficult. My goal is to fix that by going back to the basics of traditional Indian cooking.
My Channa Zaika roll uses chickpeas slow-cooked in a tangy gravy with a distinct hint of dry mango powder, or amchur, to provide a punchy flavor. For those who want something heartier, the Indian Veg Curry roll features seasonal vegetables cooked in a thick onion-tomato gravy with a classic tadka.
I treat these vegetarian options with the same respect as my meat recipes. There are no shortcuts. I source fresh vegetables daily and use homemade spice blends that I prepare myself. The wrap itself is a fresh, pan-cooked chapati, not something pulled from a packet. When you order, I wrap it tightly in foil to simulate a steam-seal, ensuring the heat and the flavours stay intact until it reaches you in Bengaluru.
