My prep station never sees a frozen chapati or a jar of mystery sauce. Every morning, I personally hand-chop the vegetables—the carrots, onions, and coriander—so that when they hit your roll, they provide that essential fresh crunch that balances the rich, ghee-roasted spices. It is simple, honest prep work that makes the difference between a quick snack and a meal you actually want to remember.
The difference between a mass-produced wrap and what I serve in my kitchen boils down to time and respect for the ingredient. When you order a roll from me, you are not getting something pulled from a freezer. You are getting a chapati or paratha that was hand-rolled and cooked on a tawa just for you.
My sourcing process is strict. I travel to find the right coastal ghee and spices because authentic flavour cannot be faked with store-bought powders. The vegetables are washed and sliced fresh daily, never pre-cut and stored. This ensures that the crispness of the onion and the sweetness of the carrot are still there when you unwrap your meal.
