About Seasonal & Limited Edition Specials
I keep my seasonal collections strictly limited, from my summer mango menu to the holiday 'Dream Cakes' trilogy. These are not just rotating flavors; they are intentional, short-run projects. Because I temper my chocolate and layer my dough by hand, I can only produce a fixed number of these items before the season changes. If you see the Mango Tres Leches or a festive tin available on the menu, grab it; when the ingredients go out of season, I pull the item until next year.
Baking with the Seasons
In my kitchen, food is a calendar. I believe that ingredients should be used when they are at their absolute peak. That is why you won't find mango desserts in December or pumpkin spice in May. By working with the natural cycle of produce available here in Bengaluru, I ensure that every pastry and cake tastes exactly the way it should.
The 'Dream Cake' Series
My festive 'Dream Cakes' are perhaps the most anticipated part of my annual calendar. These are a trilogy of white, milk, and dark chocolate, crafted into a delicate tin. The process is precise: layering a crispy French biscuit base, a velvety mousse, and a tempered chocolate shell that you have to crack to get to the layers underneath. Because these are entirely handmade in small batches, I cap production at 200 units to ensure quality doesn't slip.
Art and Taste
Sometimes, a special occasion warrants a special collaboration. You might have caught my 'Starry Selections' menu, inspired by the Van Gogh Immersive Experience at Bhartiya Mall. Bringing art into the café space allowed me to experiment with new flavor profiles like Tiramisu du Louvre and exclusive French pastries.

Whether it is the 'Mango Golden Croissant' during the summer or a limited-batch holiday run, the goal remains the same: Parisian technique applied to local ingredients. When a seasonal item hits the shelf, it means I have sourced the best quality fruit, chocolate, or butter for that specific moment.
