I keep my seasonal collections strictly limited, from my summer mango menu to the holiday 'Dream Cakes' trilogy. These are not just rotating flavors; they are intentional, short-run projects. Because I temper my chocolate and layer my dough by hand, I can only produce a fixed number of these items before the season changes. If you see the Mango Tres Leches or a festive tin available on the menu, grab it; when the ingredients go out of season, I pull the item until next year.
