We make these in small batches to ensure the fruit is fresh and the flavors are spot on. Because we do not hold stock, your dessert is baked specifically for your order, so please let us know at least 24 hours ahead if you want to snag a piece of the season.

At Vanilla Beans, we believe that nature dictates the best menu. We do not use frozen fruit or artificial syrups. Instead, we wait for the peak of the season to create our Mango and Christmas collections.
Summer: The Mango Collection
When mango season arrives in Mumbai, our Bandra kitchen smells like pure Alphonso. We take fresh, juicy mangoes and transform them into our signature creations:
- Aamrasmalai Cake: A fusion where we infuse rasmalai cream with homemade aamras, layering it with vanilla sponge and topping it with crushed pistachios and dried rose petals.
- Mango Cheesecake: A classic no-bake style featuring a thick layer of fresh mango puree on a crisp, buttery biscuit base.
- Mango Fresh Cream Cake: A light, refreshing option using house-made mango compote and fresh mango rosettes.
Winter: The Authentic Christmas Plum Cake
Come December, the focus shifts to tradition. We do not rush our Christmas cakes. We soak our dry fruits and spices in premium rum for over six months, allowing the flavors to mature into a deep, complex profile. It is the real deal, nostalgic and rich, available in both boozy and non-alcoholic versions.
