About Festive & Seasonal Cakes
For my Christmas plum cakes, I start the preparation months in advance by soaking dried fruits in dark rum. If you prefer a non-alcoholic version, I use fresh fruit juice soaked for a day, so you get the same dense, spiced flavour profile without the spirits.

I do not use premixes or shortcuts in my kitchen. Every cake is baked on a made-to-order basis, which means your treat is prepared specifically for you.
Christmas Plum Cakes
The secret to my plum cake is time. I soak a dense blend of cranberries, black currants, dates, raisins, kiwi, pineapple, orange, and mango in alcohol for months. This slow process allows the fruit to absorb the liquid and develop a deep, rich flavour. If you need a non-alcoholic option, I replicate this density using fresh juice. The cake is then spiced with cinnamon and nutmeg, then packed with pecan nuts, cashews, walnuts, and almonds. Whether you choose a round tin or a loaf shape, it arrives ready to slice.
Summer Alphonso Mango Cheesecake
When summer hits Mumbai, the Alphonso mango becomes the star of my menu. My eggless mango cheesecake features a crust base and a smooth, creamy filling. I finish each one by hand-arranging fresh, thin slices of Alphonso mango into a rose pattern. This is a delicate, no-bake cake that relies on the quality of the fruit and cream cheese to deliver a melting texture.
