Discover how we turn simple, wholesome ingredients into vibrant salads, creative appetizers, and refreshing dairy-free drinks. Everything we make is 100% plant-based, gluten-free, and designed for flavour.
A colourful and high-protein Mediterranean salad. It's packed with chickpeas, fresh vegetables like cucumber and tomatoes, and black olives, all tossed in a light, zesty dressing.
Adorable and healthy beetroot sliders. The vibrant pink buns are made from millet and beetroot, filled with a mini aloo tikki patty and crisp lettuce. They are a huge hit at parties and with kids.
An assortment of gluten-free crostini with exciting toppings. One features a bright pink beetroot hummus, while the other is topped with a fresh and tangy pineapple salsa.
Two glasses of my nutrient-packed Sesame Almond Latte, served with dates. This plant-based milk is incredibly rich in calcium and is a wonderful, healthy alternative to dairy.
A tall glass of refreshing plant-based chaas or buttermilk. It's a cooling and digestive drink, perfect for pairing with a spicy Indian meal, made entirely from vegan ingredients.
A delicious bowl of creamy vegan dessert, possibly a fruit-flavoured yogurt or nice-cream. It's topped with crunchy nuts, sweet raisins, and a drizzle of fruit syrup for a delightful treat.
A bowl of my newly developed vegan cheese sauce. It's thick, creamy, and has that savory flavour that is perfect for using in dishes like Khachapuri, pasta, or as a dip.
About Light & Fresh: Salads, Appetizers & Drinks
We don't just toss leaves in a bowl; we build our salads around homemade nut-based dressings and fermented cheese alternatives that mimic traditional textures without the dairy. Whether it is our beetroot hummus crostini or our nutrient-dense sesame almond latte, we focus on balancing texture and flavour so you never feel like you are compromising on your party spread.
At The Vedic Kitchen, we believe that 'light and fresh' should never mean boring. Our approach is to take familiar, nostalgic flavours—the kind that remind you of maakehaathkakhana (food cooked by mother's hands)—and strip away the refined flour, refined sugar, and dairy.
In our Gurgaon kitchen, we experiment with plant-based alternatives that actually deliver on satisfaction. Take our beetroot sliders, for example: we use millet-based buns and our own vegetable-based patties to create something that looks indulgent but leaves you feeling nourished. Our dressings and sauces are all made from scratch using premium organic nuts and seeds, which is why our vegan cheese sauce or sesame almond latte offer a depth of flavour often missing in store-bought options.
Whether you are looking for a caterer who understands that healthy food needs to be party-ready, or you want to attend a workshop to learn these techniques yourself, our goal is to show you that compassion tastes good. We regularly host small, hands-on workshops in Sector 50 where we walk you through the science of these plant-based swaps—like how to get that perfect crunch in a crostini or the right consistency for a dairy-free smoothie.
If you are planning an event in the NCR region or just want to upgrade your home cooking with millet-based, gluten-free appetizers, we are here to help you get started.
