Why I chose to bake it
Traditional vada pav is a deep-fried indulgence, which is great for an occasional treat but heavy for daily snacking. My baked version focuses on the comfort of a soft, pillowy bun stuffed with spiced, mashed potatoes and plenty of dry garlic chutney, just the way we like it in Mumbai.
