About Our Signature Peanut Chikki
I hand-roast every batch of peanuts until they are perfectly golden before mixing them with unbleached dark jaggery. Because I do not use liquid glucose or corn syrup, my chikki delivers a clean, sharp crunch that will not stick to your teeth.
When you buy peanut chikki from a store, you often find it either rock-hard or unpleasantly sticky. That is usually because of liquid glucose, which is used to mass-produce brittle at low costs. In my kitchen, I skip the shortcuts. I use only two main ingredients: quality peanuts and unbleached dark jaggery.
I roast the peanuts in small, controlled batches to ensure the flavor is deep and nutty. Then, I fold them into the molten jaggery while it is at the exact right temperature. Because I make these by hand, you will notice the edges are rustic and irregular, not perfectly machine-cut. This is exactly how my mother and grandmother taught me to make it.
