I am Chef Alex Rodriguez. For 40 years, I have been bringing the recipes of my home in Spain to New Delhi, crafting every dish with my family’s philosophy: ponemos cariño a las cosas—we put love into everything.

When I cook, I do not just follow recipes. Whether it is tending to the paella pan to ensure the rice absorbs every ounce of flavor or sliding fresh dough into our brick oven, I am constantly watching. My kitchen is about sensory details—the exact moment the saffron blooms or the sound of the crust setting—because that is the difference between a meal and a memory.

My story starts in my father's restaurant back in Spain. My grandmother was the alma de la cocina—the soul of the kitchen. I grew up surrounded by the smell of pimiento asado, saffron, and olive oil. That upbringing is the blueprint for everything I do here at The Claridges.

People often ask why my paella tastes different. It is because I refuse to rush. It requires constant attention, moving the pan, managing the flame, and listening to the socarrat, which is the prized crusty bottom layer. It is about patience. Similarly, our brick oven is not just equipment; it is a tool I have used for decades to impart that specific, fire-kissed char you cannot replicate any other way.

At Sevilla, I do not believe in fine dining as something stiff or unapproachable. I believe in cariño. It is a Spanish word that means affection, care, and love.
