My Desi Chaat Platter brings the best of Mumbai's street food to your party. It's loaded with favourites like Pav Bhaji Fondue, crispy Palak Patta Chaat, mini Vada Pav, and Kachoris with Aloo ki Sabzi.
This isn't your average vada pav. I've given this Mumbai street food icon a gourmet twist, serving the spiced potato fritter in a mini bun with layers of homemade chutneys for a perfect bite.
My Mini Vada Pao Platter is perfect for parties. These bite-sized delights pack all the authentic, spicy flavour of the classic street food snack, complete with tangy chutneys.
This is my modern interpretation of the classic Galouti kebab. The kebab itself is a melt-in-your-mouth mystery of flavours, served on a wholesome grain cracker instead of the traditional roti.
Here are my Mushroom Galouti kebabs served with Ulta Tawa Roti. The earthy mushrooms are spiced and cooked to a perfect tenderness, complemented by a delicate lace-like crisp.
A close-up of my Kathal Haleem, a rich and flavourful slow-cooked stew made with jackfruit and aromatic spices, served on a crisp mathri cracker and topped with fried onions.
Another version of my popular Chaat Platter, this one features Kachori with Aloo ki Sabzi, Palak Ke Pakode, and Degi Mirch Kulcha, served with all the essential chutneys and dips.
A classic Sindhi dish, Dal Pakwan, presented for a modern palate. Crispy fried bread (pakwan) is served in bite-sized portions with a flavourful lentil curry (dal) and tangy chutneys.
My Samosa Cannelloni Chaat is a true fusion creation. I've deconstructed the classic samosa and presented it in an elegant glass with yogurt and chutneys for a sophisticated chaat experience.
A playful take on Chana Jor Garam, served on a crisp base with fresh toppings and a duo of dips. It's a nostalgic flavour presented with modern elegance.
About Indian Fusion: A Modern Twist on Tradition
You might wonder how a Samosa Cannelloni or Pav Bhaji fondue works in a party setting. The secret is in the preparation. I ensure every component of these fusion dishes arrives ready to serve, maintaining the exact texture and temperature that makes the original recipe work. You are not just getting food, but a curated experience designed to start conversations at your gathering.
Fusion food often gets a reputation for over-complicating simple flavours. My goal is the opposite. I work with the foundation of Chef Nita Mehta’s recipes, keeping the heart of the dish intact while changing its delivery to suit modern preferences.
Take my Mushroom Galouti kebabs. Instead of a traditional, heavy roti, I serve them on a delicate, crispy cracker. This allows your guests to enjoy the melt-in-the-mouth texture of the kebab without feeling overwhelmed by a dense bread base. Similarly, my Dal Pakwan is presented in bite-sized portions that make it easy for guests to walk around with a drink in one hand and a snack in the other.
Whether you are planning an intimate home party or a larger celebration across Delhi, these platters serve a practical purpose. They reduce the clutter of traditional buffet setups and bring an elegant, visual appeal to your food service. You can choose from themes like my Desi Chaat or global platters, all designed to make your event planning seamless and the dining experience enjoyable.
NM Foods by Tanya
I grew up learning in Chef Nita Mehta’s kitchen, always asking how we could do things differently. Now, I bring that legacy of flavour into the modern day, focusing on how food looks as much as how it tastes.
