From my kitchen in Cochin to Bangalore, here is my take on the global classics I love, made the slow and honest way.

I laminate the dough for my croissants by hand, fold by fold, waiting for the perfect temperature before shaping. It takes hours of work, but that specific sound of the crust crackling when you pull it apart is what makes the entire process worth every minute in my kitchen.
