About The Heart of Khat Mitthi: Our Story
I don’t use machines for my pickles. Every vegetable is hand-cut and sun-dried for 5 to 7 days, the same way my dadi did in Bihar. By using cold-pressed mustard oil and hand-ground spices, I ensure each batch stays fresh and full of that 'ghar ka swaad' without using a single drop of artificial preservatives.
When I started Khat Mitthi, my goal wasn't just to make food; it was to preserve a way of life. In a world full of mass-produced, chemically preserved jars, I wanted to bring back the patience and love that goes into making a real achaar.
My process is simple but time-consuming. I personally source farm-fresh produce and spend days sun-drying ingredients to ensure natural shelf life. I don’t believe in adding vinegar or sodium benzoate to speed things up. If you look closely at my jars, you’ll see the texture of hand-cut vegetables and the richness of spices that are ground at home, not bought from a factory shelf.
Why my pickles are different:
- Small Batches: I make everything in limited quantities so that you receive fresh products, not jars that have been sitting in a warehouse for months.
- No Preservatives: You get the honest taste of vegetables and spices, just like you’d make in your own kitchen.
- Authentic Bihari Flavours: My recipes are inherited. From the sharp tang of our lemon pickle to the deep, earthy spice of our Bharwa Lal Mirch, every jar represents a specific memory from my childhood.
