About this collection
Our pickles aren't made in a factory. Every jar, from our signature Lal Mirch to the tangy Oal, is sun-dried in the courtyards of Darbhanga using traditional methods passed down from our dadi. We don't use artificial preservatives or forced fermentation, we rely on time, pure mustard oil, and the patience to let the natural rhythms of the season do the work.
When we talk about Bihari pickles, we're talking about a slow process. In our Mithila kitchens, making an achar isn't a one-day task. It starts with sourcing seasonal produce, like fresh jackfruit in spring or the deep red Banarasi chillies when the winter chill sets in.
Once cleaned, the vegetables are seasoned with salt and spices, then left to sun-dry in the intense Darbhanga heat. This natural dehydration is why our pickles do not need artificial preservatives. The final step involves mixing them with high-grade sarson ka tel and letting them mature. This patience transforms simple vegetables into the Lal Mirch Bharua, Oal, and Amra pickles that define our collection.
