The secret to our pickle isn't a complex formula; it is patience. Maa manually sun-dries the vegetables, like raw mango and amla, for days to remove excess moisture before they ever touch the oil. This traditional process ensures they last for months without any artificial preservatives, giving you that authentic, punchy taste you can only get from a family kitchen.
The Art of Slow Cooking
We don't use large-scale machinery. Every jar is packed by hand, following the exact steps Maa used for years. We source pure Kachi Ghani mustard oil, which we heat traditionally to balance the pungency. For the spice blends, we prefer a coarser, 'dardara' texture for the fennel, nigella, and fenugreek seeds, rather than fine powder. This adds that crucial crunch and depth to every bite.
