The Mithila Process
We source our makhana directly from the ponds of Darbhanga. These are harvested, cleaned, and roasted by hand, not by machines. When we grind them, we keep the texture coarse and chunky so you get the real mouthfeel of a traditional kheer, rather than a fine, powdery consistency.
