I portion out the condiments and pack the caramelised onions so you skip the prep work and get straight to the cooking. It is a foolproof way to have a proper, high-quality meal at home without having to scramble for ingredients.

What’s inside the box
I want you to experience the exact flavours I serve at my pop-ups. Every kit includes four fresh brioche or sesame buns, your choice of four patties, cheese slices, and my house-made garlic mayo, mustard, and relish. I also throw in a container of caramelised onions and sautéed mushrooms to round it out.
The patties
This is where my heritage comes through. Whether you choose the slow-cooked pulled pork or my signature oyster mushroom patty, you are getting food seasoned with spices from our family estate in Coorg. My mushroom patty is especially popular because it uses a proper desi tadka (Indian touch) with coriander and jeera for a deep umami hit.
Serving tips
I suggest toasting the buns with a bit of butter for that extra crunch. If you are using the frozen patty packs, cook them on a hot cast iron pan to get a nice crust on the meat.
