About Sculpted & Realistic Cakes
When I carve a cake to look like a Ferrari or a Rubik's cube, I use dense mud or truffle sponges instead of light vanilla. This is the only way to get the structural integrity needed for these shapes, so your cake stays standing exactly as carved until the moment you cut it.
You have a vision, and I have the carving tools. For these sculpted pieces, the process is quite different from a standard tiered cake. I start by baking layers that are firm enough to hold a sharp edge, then I carve away the excess sponge until the object takes shape. I finish the look with high-quality fondant or ganache to add those textures that make people ask, 'Is that really a cake?'
Whether you want a piece of tech, a luxury bag, or your favorite food item, these cakes are about detail. Because they require hand-carving and precision, I require a minimum of 3 to 5 days of notice. This gives me the time to plan the internal support structure, as there are often food-grade dowels and boards inside to keep things upright, and to paint or texture the surface.
