A handpicked look at my most creative projects, from towering 18-inch statement cakes to hyper-realistic sculpted designs.

This is one of the tallest three-tier cakes I've ever made. It was a whopping 7 kg and stood 18 inches tall, creating a true centerpiece for a Boss Baby themed party. Each tier was a moist vanilla butter sponge with a berry filling, all frosted in a smooth white chocolate ganache.

For the ultimate Game of Thrones fan, I handcrafted this Iron Throne cake. Each and every sword on the throne was individually made from fondant, a process that took hours but was worth it for the final look. The cake itself was a rich Ferrero Rocher flavor.

I love how this galaxy cake turned out. It’s a double-barrel cake, standing almost 12 inches tall, with a decadent chocolate sponge inside. I created the galaxy effect using multi-colored white chocolate ganache, complete with a fondant moon and edible stars.

Is it a bottle or is it a cake? This realistic Jack Daniel's bottle was carved entirely from cake to celebrate a special 50th birthday. It’s a great example of how we can turn almost any idea into a delicious, edible centerpiece.

I get to bake for people with all kinds of passions, and this was my first cake for a fashion designer. My favorite part was recreating the designer's sketches, or croquis, by hand-painting them onto edible fondant sheets.

This 24-inch tall autumn-themed peacock is one of my award-winning creations. I shaped the feathers to look like fall leaves using delicate sugar sheets, creating a unique and artistic display. It’s a testament to how we can blend art with baking.

This hyper-realistic pizza cake is one of my favorites to make because it always gets a "wow" reaction. Every topping, from the olives and peppers to the grated cheese, is handcrafted from fondant and white chocolate to look just like the real thing.

Here’s a little peek into how I created this Taylor Swift albums cake without using any fondant for the design. I used a parchment paper stencil and careful frosting work to get those clean, colorful sections, showing how we can achieve sharp looks with buttercream.
