About this collection

When I use fresh strawberries or cherries, I prepare them specifically to hold up against the buttercream without making the sponge soggy. You get that fresh fruit flavour integrated into every bite, rather than just a garnish sitting on top of the frosting.

I build my cakes around the flavour first. Most people assume that adding fresh fruit means just tossing berries on top, but that doesn't work for a structural, moist cake. I use a buttercream dam to seal the sponge, ensuring the moisture from the fruit stays where it belongs—in the topping, not in the cake base.
