For standard wedding tiers, I use food-safe internal dowels for stability, ensuring your cake stays solid even if it is traveling across Mumbai or out to Dahanu for a destination wedding.
Planning a wedding cake is about more than just the look. My approach starts with a conversation to understand your theme, whether it is a vintage buttercream design or a modern, floating structure.
My Approach to Wedding Cakes
- Flavor & Structure: I believe the inside matters as much as the outside. I use premium ingredients like Belgium chocolate and hazelnut praline to ensure the sponge is as memorable as the design. For complex tiered cakes, I prioritize structural integrity with internal skeletons and boards so the cake handles transport well.
- The Chandelier Specialty: These are engineering projects as much as they are cakes. I work with custom armatures to create the hanging effect, ensuring they are safe for display. If you choose this style, I coordinate directly with your venue or event planner to handle the rigging.
- Finishing Touches: Whether you want fresh hydrangeas, gold leaf, or intricate Lambeth-style piping, I tailor the aesthetic to match your decor. I often visit the venue for final stacking and touch-ups to ensure everything looks perfect before the cutting ceremony.
I offer a tasting box of 4 to 6 flavors before we finalize your order so you know exactly what you are serving your guests.
