When I design a berry cake or tart, it is not just about the decoration. It is about the contrast. I balance the natural, sharp tartness of fresh Mahabaleshwar strawberries, blueberries, or mulberries with the deep, creamy sweetness of 54% Belgian Callebaut chocolate.
My process is simple: I wait for the fruit to be at its peak. If the berries are not looking bright and juicy, I will not put them on your cake. This means my menu shifts slightly from month to month.
