When we build our fruit trifles, we layer fresh cream and sponge with fruit compotes made from scratch, rather than relying on pre-packaged syrups. The reason these feel so different from standard bakery desserts is that we finish them with Swiss Meringue Buttercream or light Chantilly, keeping the sugar levels balanced so you can actually taste the fruit, not just the sweetener.
