I do not believe in shortcuts or compound chocolate. Every ganache, glaze, or swirl you see here is made with real Belgian couverture chocolate. It is the difference between a cake that just tastes sugary and one that actually melts the way good chocolate should. If you have been disappointed by waxy textures in the past, this is where that changes.

My obsession with chocolate comes from a simple belief: if it is on the menu, it needs to be the best version of that dessert you have ever tasted. I trained at Le Cordon Bleu, and while I love fancy techniques, my priority is the bite.
