Life comes full circle. Seven years ago, I made a lopsided cake for my cousin's engagement. Today, I set up this beautiful cupcake tower for her daughter's 5th birthday, featuring lotus biscoff and fresh strawberry mini cupcakes.

If I were getting married again, this is the cupcake tower I would have. This dreamy setup features 52 vanilla cupcakes with pink and white buttercream roses, all arranged on a tower with a 2kg hazelnut praline cake on top.

This is part one of creating a dreamy wedding dessert setup. I'm making dozens of vanilla cupcakes, some filled with dark chocolate and others with Nutella, and frosting them with pink and white buttercream.

I have a simple rule: if a cupcake isn't center-filled, it isn't worth eating. Every single cupcake I pipe is packed with rich Belgian chocolate ganache or fruit compotes to make sure you get a burst of flavor in every bite. I skip the fondant entirely because I would rather spend my time perfecting a smooth buttercream or a delicate ganache flower.
