Hi, I am Charu Shah, a Jain home baker. I started The Dolce Baker four years ago, and I bake cakes, cupcakes, tarts, and now cookies too, mostly without maida, butter, and sugar.

About From My Kitchen to Your Home

When I bake, I skip refined flour and butter entirely, relying instead on pulverized oats, almond meal, and cold-pressed oils for structure. This makes the cake dense and rich, not light or airy. My biggest tip, especially during the monsoon, is to microwave any of my cakes for 20 seconds before eating. It warms the ingredients, makes the texture melt in your mouth, and brings out the flavor profile.
