We blend familiar Indian tastes with unexpected global flavors to create menus that tell a story.

This dish is the heart of my culinary philosophy. I asked, "What if a classic Kerala Appam met savory Thai-style mushrooms?" The result is this comforting yet adventurous fusion dish, showcasing how I blend familiar Indian tastes with global flavors.

For a "South India meets Southeast Asia" theme, my chef created this incredible Kakka Rotti with Tteokbokki, blending Korean rice cakes with South Indian tomato pickles and Thai-style vegetables.

My travels with my chefs constantly inspire new dishes. Here, Chef Akshat Agarwal talks about how a trip to a Thai vegetarian festival led to the creation of this unique dessert using achappam, injipuli, and coconut sorbet.
