Modern Indian & Global Fusion Catering
We blend familiar Indian tastes with unexpected global flavors to create menus that tell a story.
This dish is the heart of my culinary philosophy. I asked, "What if a classic Kerala Appam met savory Thai-style mushrooms?" The result is this comforting yet adventurous fusion dish, showcasing how I blend familiar Indian tastes with global flavors.
For a "South India meets Southeast Asia" theme, my chef created this incredible Kakka Rotti with Tteokbokki, blending Korean rice cakes with South Indian tomato pickles and Thai-style vegetables.
My travels with my chefs constantly inspire new dishes. Here, Chef Akshat Agarwal talks about how a trip to a Thai vegetarian festival led to the creation of this unique dessert using achappam, injipuli, and coconut sorbet.
A steaming, aromatic Thai Herbal Soup being served in individual glass jars. This is a comforting and intensely flavorful dish that we love to include in our fusion menus.
Popcorn, but make it pasta. This video shows our Four Cheese Cappellaci with a surprising popcorn butter sauce, crispy sage, and caramelized onion.
The making of our popcorn pasta, with freshly grated parmesan cheese being showered over the cappellaci.
The first step in plating our unique pasta dish: portioning the four-cheese cappellaci into bowls.
About this collection
When we combine Kerala appams with Thai-style mushroom larb, we aren't just mixing ingredients. We focus on the reason behind the flavor, using traditional mortar and pestle techniques to create the toasted rice powder that ties the dish together. It is this balance of local comfort and unexpected global technique that defines our fusion approach, ensuring your guests taste the intention in every bite.
We approach fusion as a conversation between cuisines. Whether it is taking the chewy texture of Korean Tteokbokki and simmering it in a spicy South Indian tomato thokku, or reimagining a four-cheese cappellaci with a popcorn butter sauce, our goal is to surprise the palate while staying rooted in familiarity. Our process begins with an inquiry into your personal story. We ask: What were the flavors of your first date? What childhood snack do you miss the most? We then weave these memories into dishes that challenge the standard catering mold. You will not find generic chafing dishes here. Instead, we use custom serveware, thoughtful plating, and interactive elements to ensure the presentation matches the intensity of the flavor. From our studio in Mahalakshmi, we design menus for intimate sit-down dinners and large-scale celebrations across India, always ensuring that the food is a primary talking point of your event.
