Creative South Indian Catering with a Fusion Twist
I take traditional South Indian favourites and give them a fiery, modern spin. From cheesy Pizza Dosas to my signature Lava Idli, I craft interactive, live counters that turn your food into the main event.
This is my Pink Cheese Burst Idli. I love watching guests' reactions when they cut into the soft, pink-hued idli and a stream of molten cheese flows out. It's a fun, colourful, and delicious surprise.
A fusion of two cultures, my Sushi Idli is a creative appetizer that always intrigues guests. Soft idli is rolled with crisp vegetables and served with coconut and tomato chutney, mimicking the look of a sushi roll.
My Lava Idli is a classic with a fiery twist. These soft, fluffy idlis are filled with hot sambar that flows out like lava when you cut into them, creating a delightful and interactive food experience.
This is my Kulfi Idli, a playful take on a South Indian staple. Mini idlis are served on a stick, perfect for dipping into a tangy and creamy sauce, making it a fun and easy-to-eat appetizer.
For those who like it hot, I created the Hot Sizzling Bonda. These classic potato bondas are tossed in a spicy peri peri sauce and served on a sizzling platter, filling the air with an amazing aroma.
When a classic dosa meets the cheesy goodness of pizza, you get my Pizza Dosa. This video from my live counter shows the whole process, from spreading the batter to adding pizza toppings and lots of cheese.
My KGF Fire Idli is all about the drama and flavour. A soft idli is topped with sauce, veggies, and cheese, and then torched right at the counter to create a smoky, melted, and absolutely irresistible dish.
My Jini Dosa is a Mumbai street food classic that I love to serve at events. The crispy dosa is filled with a mix of vegetables and sauces, rolled, cut, and topped with cheese and a creamy drizzle.
A chef at my live dosa station expertly prepares multiple dosas at once. This action shot captures the steam and sizzle, showcasing the freshness and skill involved in my South Indian catering.
This is my Peri Peri Dosa being made on the griddle. It's a vibrant and flavourful creation, loaded with fresh veggies, spicy sauces, and a generous topping of cheese for a perfect fusion of flavours.
About South Indian Signatures, Reimagined
My live stations are designed to manage high guest volume without the usual wait times. For an event of 200 guests, I recommend setting up two distinct stations—one for crispy, live-prepared dosas and another for my 'Lava' or 'Pink Cheese Burst' idlis—to ensure every plate is served hot, fresh, and perfectly torched right in front of your guests, keeping the energy high and the lines moving.
South Indian Flavours, Reimagined
Traditional South Indian food is the ultimate comfort, but at a wedding or party, it can sometimes feel a bit predictable. That is where my fusion approach comes in. I love taking the classics you grew up with—soft idlis, crispy dosas, and spicy sambar—and giving them a personality upgrade. Whether it is a Sushi Idli that brings a touch of global flair or a Pizza Dosa that hits those cheesy cravings, I focus on dishes that are as fun to watch being made as they are to eat.
Why Live Stations Matter
Food is an experience, not just fuel. My live counters are designed to be an icebreaker for your guests. Watching a chef torch a KGF Fire Idli or assemble a Jini Dosa right before their eyes builds excitement and conversation. It is why I emphasize interactive elements like my sizzling Peri Peri Bonda stations; the aroma and the sizzle draw people in, making your food setup a focal point of the party.
Customising Your Menu
I do not believe in fixed templates because every guest list has different tastes. If you want to keep the main buffet traditional with classics like Tatte Idli and authentic Rasam Vada, we can add a 'Fusion Corner' for the younger crowd. This ensures you have the comfort of tradition with the excitement of something new. From the type of serveware we use to the flow of the buffet islands, I plan the logistics to match the venue's vibe, whether you are hosting in a Mumbai banquet hall or an outdoor space in Alibag.
Let’s chat about your guest list and theme. I can help you pick the right balance of traditional and 'hatke' (unique) dishes that fit your budget and keep everyone happy.
