About this collection
You won't find pre-packaged masalas in our kitchen. Every gravy, whether it’s our spicy green masala for chicken or the rich mutton base, starts with whole spices and fresh herbs sourced locally on the morning of your event. We believe that if the base isn't perfect, the final biryani won't have that signature smoky depth, which is why we take the time to prep everything from scratch in large batches.
When you order food in bulk, consistency is usually the first thing to suffer. Most caterers rely on pre-made mixes to save time, but my process is designed to handle volume without losing that homemade flavour.

Before the fire is even lit, we spend hours grinding fresh ingredients. Why We Cook Over Firewood
Cooking in large deghs over real firewood isn't just a gimmick. It allows for a slow, even heat that electric or gas stoves just cannot replicate. This process is essential for the meat to absorb the spices fully and for the rice in our biryani to get that distinct, smoky aroma. It requires constant attention, which is why my team and I personally supervise every batch.
