Cooking biryani in massive deghs over open firewood isn't just a method for us—it’s the only way to get that deep, smoky flavour. Unlike gas-stove catering, our firewood process requires constant attention to the flame and timing, but the difference is in every grain of rice. We apply this same dedication to our full range of Mughlai, Indian, and Arabian dishes.
