You will notice my ragi brownies stay fudgy despite being healthy, and that is because I use real Van Houten couverture chocolate. When it comes to the granola bars, the real trick is in the binder. I can use jaggery, honey, or even mashed black dates if you want a no-sugar option, so you get exactly the balance of fibre and energy you need.
