About My Process & Philosophy
I do not use fondant because it masks the real flavor of the dessert. Instead, I use cocoa butter frostings and natural colors, which is why my cakes taste like actual chocolate and fruit rather than just sugar. This is the difference between a factory cake and one made by hand.
My process starts with sourcing. I rely on Valrhona and Callebaut chocolate for their depth and consistency. Every cake, whether it is a minimalist gold-leaf creation or a complex themed design, follows a standard: three layers of eggless sponge, soaked in natural reductions, and filled with ganache made from scratch.
When I design a cake, I look at it as a canvas. I use natural extracts—turmeric for yellows, beetroot for reds—to achieve colors without synthetic additives. I prefer cocoa butter piping to create texture rather than using fondant sheets that compromise the taste. This commitment extends to my packaging, where I use sturdy, tall boxes to ensure your cake arrives in Bengaluru looking exactly as it did when I finished the final detail in my Basavanagudi kitchen.
I treat each celebration as a chance to share a piece of my heritage, inspired by the royal kitchens of Jodhpur. My goal is simple: to make sure that when you unwrap your box, you are getting a fresh, handcrafted product that respects the ingredients as much as it respects your occasion.
