About Choux Pastries & Little Treats
Making the perfect choux pastry is about the texture. It requires balancing that delicate, crisp craquelin shell with a smooth, rich filling. When I pipe these, I watch for the moment the dough hits the oven and puffs up just right. It is a temperamental bake that requires patience, but that first crunch is worth the effort.
My journey with choux started at the Culinary Institute of America, and it took a few trials to get the crispness right for our Delhi humidity. I use a classic French technique, layering a crunchy craquelin topping over the choux bun to ensure every bite has that signature texture.
We offer these in a variety of combinations, whether you want a decadent chocolate caramel center or a light, fruity raspberry diplomat cream. They work beautifully as a modern alternative to a traditional cake tower, or simply boxed up for a thoughtful gift.
