Fusion and Festive Cakes for Bangalore Celebrations

I love giving traditional Indian sweets and festive classics a modern, eggless twist. From Baadusha doughnuts to Unniappam-inspired bundt cakes, these are my experimental creations made to celebrate every season.

This is a glimpse of my 'Nandi 2024' Onam menu, a special collection I created to thank my wonderful Malayali clients. It features fusion bakes like Unniappam cakes, Butter Buns, and Masala Biscuits.

These are slices of my Pistachio Kunafa Chocolate Cake, ready for a bakesale. This creation combines the textures of crunchy kunafa, creamy pistachio, and rich chocolate cake.

A closer look at my Unniappam Inspired Bundt Cakes. These mini cakes are packed with the flavors of banana and jaggery, a tribute to a beloved Kerala snack.

For Diwali, I created these Baadusha-inspired doughnuts. I use my soft doughnut dough to create a modern take on the traditional Indian sweet, soaked in a fragrant syrup.

Here you can see my Baadusha-style doughnuts soaking in a light sugar syrup. This process ensures they are moist and flavorful, just like the classic mithai.

This festive Christmas Wreath Cake Tub is a perfect example of my holiday specials. It's a mini Chocolate Butterscotch cake, decorated to be a perfect, shareable festive treat.

No Christmas is complete without a classic fruit cake. My version is made with fruit mince that has been naturally fermented for a long time, resulting in a deep, rich flavor.

This is a close-up of a custom cake, showing the detailed fondant and buttercream work. I love adding personal touches like this miniature dosa on a banana leaf for a client's birthday.

About Fusion & Festive Creations

I don't just put a festive spin on things. For my Baadusha doughnuts, I replace the traditional fried base with my signature soft, oven-baked brioche doughnut dough. It keeps the classic flavour profile you expect but makes the texture lighter and way easier to snack on.
