About A Note From The Baker
I am always in 'mad scientist mode'. If you have ever wondered why my doughnuts are never fried or why my menu changes with the seasons, it is because I am obsessed with testing new techniques to get the texture just right. Every batch I bake is a conversation, and I am genuinely grateful you are part of it.
Baking is so much more than just mixing ingredients. When I started Le Soir, I wanted to create bakes that felt like a personal thank you to the community that supported me, especially my amazing Malayali clients. That is where the Nandi, or gratitude, menu came from.
I believe in a 'Baked Not Fried' approach for my doughnuts, which keeps them soft, fluffy, and way lighter than the ones you usually find. Whether I am experimenting with a new filling like salted caramel chocolate or sculpting bread into edible bouquets, my goal is to turn your stories and vibes into something delicious.
I do not use preservatives, and I am very particular about my ingredients, especially the less-sweet buttercream that so many of you seem to love. Since everything is made fresh in my home kitchen in Bangalore, I really appreciate it when you book in advance. It helps me ensure your treats are baked to perfection, whether you are ordering Korean cream cheese garlic buns, festive mince pies, or a fully custom celebration cake.
