About this collection

You aren't just learning to melt chocolate here. You are learning structural engineering with sugar and cocoa butter. In these modules, we teach you how to properly temper, mold, and balance massive showpieces that actually stand up, using premium Callebaut chocolate and the exact techniques that our own WorldSkills medalists have mastered.

More Than Just Decoration

Chocolate and sugar work is where physics meets flair. It is demanding, messy, and absolutely rewarding. In our specialization modules, we strip away the fluff and focus on the technical rigour required to build standing structures—whether it is a full-scale sculpture of a dough sheeter or delicate, edible rainforest elements.

What You Will Actually Be Doing

  • Structural Integrity: You will learn why humidity, temperature, and cocoa butter ratios can make or break your design. We use deck ovens, spiral mixers, and real-world tools to prep our base elements.
  • Design to Assembly: You start with sketches and ideation. Our chefs help you bridge the gap between a drawing on a screen and a three-dimensional sculpture that stays standing.
  • Quality Ingredients: We don't use compound. You get to work with professional-grade couverture chocolate (like Callebaut) because the work is only as good as the raw material you start with.
