Artisanal Bread & Crafted Doughs
This is our intensive, four-week, hands-on program where you will master the world of breads. We cover everything from the science of fermentation and gluten development to the art of shaping and scoring, including sourdough, viennoiserie, and international breads, leading to a dual certification from Lavonne and City & Guilds, London.
Bean-to-Bar Chocolate Immersion
This unique four-week program offers a complete education in chocolate, certified by City & Guilds, London. You will spend two weeks at a Mysore cocoa farm learning about cultivation and fermentation, followed by two weeks in our academy mastering the technical skills of roasting, grinding, and tempering to create your own artisanal chocolate.
Authentic Gelato Program
In partnership with Carpigiani Gelato University, Italy, this program is your gateway to mastering authentic gelato. The course includes two weeks of intensive, hands-on training at our academy, followed by a two-week internship at our artisanal gelateria, LICK, for real-world experience.
Chocolate & Sugar Artistry
This is where pastry becomes art. Our specialization courses include intensive modules on creating large-scale, gravity-defying showpieces from chocolate and sugar. You will learn design, molding, sculpting, and assembly techniques to bring your most ambitious creative visions to life.
