We believe the magic of a real French pastry is in the technique, which is why we use 82% fat French butter for our 27-layer laminated croissants. Whether you are grabbing a choux pastry or a slice of our coffee-soaked Opera cake, you are getting authentic ingredients like Callebaut chocolate and fresh mascarpone, rather than the quick-fix shortcuts you find elsewhere.
When you walk into our kitchen, you will see the patience that goes into our pastries. We do not rush the process. Our Opera pastry is a labor of love, requiring layers of coffee-soaked Joconde sponge, dark chocolate ganache, and smooth buttercream to achieve that perfect balance of coffee and cocoa intensity.
Our choux pastry shells are baked until they reach that ideal golden-brown crisp, then filled with creamy vanilla or hazelnut pastry cream exactly when you order them, so the shell stays crisp and the filling stays cool. If you are looking for something richer, our Tiramisu is built with authentic mascarpone and real espresso, offering a dessert that feels indulgent without being overly sweet.
