We don't cut corners with our Viennoiserie. Every single croissant you see here goes through a 27-layer lamination process using 82% fat French butter, which is exactly why they shatter just right when you take that first bite. We bake them daily so the honeycomb structure inside is always airy and light, not dense or oily.
