As a Mumbaikar, I had to bring the Bombay Toastie to our new menu. It takes me right back to the streets of Mumbai, especially when paired with our refreshing lime basil hibiscus rush.
We break the myth that biryani has to be heavy and unhealthy. Our vegan version is made with brown rice, lots of vegetables, and a probiotic plant-based curd, all infused with a smoky charcoal flavor.

We started Justbe to show that traditional Indian food does not need to be heavy or greasy to be authentic. Growing up, the richness of a dal makhani or the comfort of a paratha was often defined by ghee and butter. In our heritage home in Sadashiva Nagar, we have redefined these staples to offer a lighter, healing alternative.
Our 'Parathe Wali Gully' thali is the best example of this. We pair spinach parathas with a creamy, vegan dal makhani that has all the depth of the original, without the saturated fat. We also use plant-based curd made from nuts to bring that probiotic goodness into our dahi papdi chaat, keeping it refreshing and light, which makes it perfect for a meal in Bangalore's weather.
The biryani challenge was our biggest task: how to get that smoky richness without the fat? We use charcoal infusion and layer brown rice with fresh vegetables, proving that you do not need dairy to achieve a perfect mouthfeel. Every dish here is 100% plant-based, made without maida, refined sugar, or oil. It is food that truly loves you back, whether you are stopping by for a quiet lunch or booking a festive meal for your family.
