I don't use gas stoves. Every vessel of biryani you see here is cooked the old-school way over a wood fire at your venue. This gives the meat and rice that specific smoky aroma you miss in regular catering. When you book, you aren't just getting food; you're getting my personal supervision to ensure the dum is perfect and the rice stays long and fluffy, never mushy, even if we are feeding a thousand guests.
My approach to Bhai Biryani is simple: it is about patience. You cannot rush a good dum. I start by layering marinated meat, fresh tomatoes, and hand-ground masalas, then let it slow-cook over wood embers. It is a labor-intensive process, but that is the only way to get the true, authentic taste that my family has been perfecting for 16 years.
