Behind the Scenes: My Cake Artistry & Process

I am Namita. People usually see the finished cake, but here is a peek at the sketching, piping, and late-night sugar work that actually goes into every creation from my Malleswaram kitchen.

This video shows the entire process behind my award-winning "Markets of India" cupcake display for Cakeology 2024. From the initial sketch to creating edible fabric for the sari and transporting the delicate piece, it was a journey I'm so proud of.

I was so excited to get an order for an Airforce-themed cake, inspired by the Surya Kiran aerobatic team. Here you can see the process of hand-piping the royal icing details onto the airplane-shaped cookies that decorated the cake.

About Behind The Scenes: Our Process

Every cake and cookie you see here is made to order. I start by sketching, testing my fondant, and hand-piping every detail because I believe the story behind the cake matters just as much as how it tastes.

I started Cake It Easy in 2013 because I wanted to move away from generic bakes and make cakes that actually tell a story. Whether it is a competition piece like my 'Markets of India' cupcake display or a simple birthday cake for a local family in Malleswaram, I treat every order as a personal project.

My Process

When you order from me, you are not just getting a cake. You are getting hours of planning. I often spend days doodling designs before I even touch an oven. I handle the structural work—like dowelling tiered cakes for safety—and do all the hand-piping myself. My sister, Nivedita, usually handles the dipped treats and cake pops, as she is the real pro with the finishing touches.

The 'How' Behind the Art

  • Sugar Art & Sakkare Acchu: I love exploring traditional techniques. I often incorporate Sakkare Acchu (sugar figurines) for festivals, mixing my training with techniques passed down from my ajji.
  • Royal Icing: For cookies, I stick to royal icing. It allows for the intricate, hand-painted details you see in my collections, from Santa faces to personalized names.
  • Fondant vs. Buttercream: If you are not a fan of fondant, let me know. I use cookies or chocolate toppers for decor, and I am always happy to find a workaround that keeps the cake tasting fresh.

Practical Details

I run this studio out of Malleswaram, so all orders are strictly for pick-up. Because these creations are delicate, please remember to keep your car AC on during transport, especially if you are driving during the Bangalore summer. I usually need a few days of notice for custom work, so do reach out early to discuss your idea.
