About this collection

I often get asked how I handle fresh fruit fillings without the cake collapsing. The secret is the 'dam' method. I pipe a sturdy border of buttercream around the sponge edges before adding fresh mangoes or strawberries, which locks that fruity goodness in and keeps the whole cake perfectly stable.

My kitchen is my happy place, but it is not a pristine, polished factory. It is a real working studio where I spend my days mixing, piping, and sometimes making a total mess until everything is just right.

When you order a cake from me, you are not getting a frozen sponge pulled from a shelf. I bake everything fresh, usually within 24 hours of your delivery or pickup. Whether it is a vintage Lambeth-style cake with intricate piping or a quirky 3D carved design, I handle the structural engineering myself. This includes using internal dowels for stability, especially for my taller or carved cakes, to make sure they reach you exactly as they look in my sketches.

I also love experimenting with seasonal ingredients. If you see mangoes or berries on my feed, it is because I hand-picked them. My philosophy is simple: keep the fondant minimal, focus on high-quality buttercream, and make sure the taste is just as good as the look.
