About this collection
Here is the honest truth about our starters: we don't buy our cheese from a factory. We make our own mozzarella and burrata three times a day. When you order a salad, you are getting that fresh, creamy cheese paired with sourdough made from the same dough we use for our pizzas. It is not just an appetizer; it is our way of showing that fresh ingredients do not need to be complicated.
While the sourdough pizza gets the spotlight, we put just as much craft into the rest of the menu. We believe that a great meal starts with real, honest ingredients.
Our salads are designed to be light yet satisfying. Take our Mango Tuscan salad, for instance. It became a fan favorite because it balances the sweetness of seasonal mangoes with the tang of our house-made sourdough croutons and the creaminess of fresh burrata. It is simple, effective, and fresh.
Then there is our Panzanella, which is really just an excuse for us to showcase our bread. We take that same sourdough we ferment for 48 hours, toast it to give it a crunch, and toss it with roasted apples and nuts. For a more earthy option, our smoked beetroot salad is a go-to. We pair the beets with our fresh, house-made ricotta, creating a texture contrast that feels right for a quick lunch or a dinner starter.
We don't do mass-produced cheese. Whether it is the ricotta, mozzarella, or burrata, it’s all made in-house using 100% cow’s milk. No stabilizers, no palm oil, just the stuff that tastes good.
