Here's the story of our Dabeli Bruschetta. Created for a wedding between an Italian groom and a Gujarati bride from Bombay, we fused her love for dabeli with his heritage, creating a crunchy, flavourful bite that told their unique story.

South Indian comfort, Italian form, one unforgettable bite. We created these Curd Rice Arancini for a special birthday, featuring a creamy curd rice filling and a surprise burst of mango pickle at the centre.

Introducing our Desi Tacos Bar. We take mini tortillas and fill them with Indian favourites like Amritsari chicken tikka or crispy pepper potatoes, then top them with guacamole, chipotle sour cream, and pico de gallo for a fun, fusion experience.

A fusion of Indian flavour in an Italian classic. Our Paan Mousse Cannoli surprises with the aromatic touch of paan, wrapped in a crispy shell and delicately finished with rose petals and pistachios.

How do you create a dessert for a bride who isn't a sweet tooth and a groom who loves gulab jamun? Our Gulab Jamun Shooter layers the classic sweet with biscuit crumble and cream cheese for a balanced, beautiful, and transparently delicious treat.

A taste of tradition with a touch of today. We reimagined the humble Muradabadi dal chaat as a crisp, elegant tartlet. It's bite-sized, beautifully balanced, and bursting with the flavour of warm mung dal and a red chilli hing tadka.

A spicy, smoky twist on the classic bao. Our Gochujang Cauliflower Baos combine Indo-Chinese and South Korean flavours, adding a surprising and delicious touch to any mixed wedding menu.

When we start designing a menu, we don't look at standard packages. We look at your memories. If you love a local street snack but want to serve it at a formal sit-down reception, we figure out how to transform the form without losing the soul. That might mean turning a traditional Muradabadi dal chaat into a crisp, bite-sized tartlet with a sharp heeng tadka, or re-imagining a classic Dabeli as a crunchy bruschetta. It is about keeping the taste honest while surprising the palate.

Every fusion dish we create starts in our 'innovation kitchen.' We bring our clients in for trial sessions to experiment with these ideas. For example, when a client asked for sushi, we didn't just buy a standard recipe; we recreated a Prawn Tempura roll with mango conserve to honour a travel memory from Paris. That is the philosophy behind our 'Behind the Bite' series. We dissect the dish, identify the key taste, and then rebuild it using a completely different culinary lens.
