A modern take on a traditional snack: Charcoal Sopapillas with Methia Tindola. The smoky charcoal dough provides a stunning visual contrast and a unique flavour profile that is both bold and delicious.

A creative fusion of North Indian and Pan-Asian cuisines: Sarson da Saag Paneer Bao. A soft, steamed bao bun is stuffed with classic mustard greens and cottage cheese, served with a dollop of makhani sauce.

The magic of modern Indian weddings lies in the details. Here, we use a blowtorch to finish a dish, adding a touch of culinary theatre and a beautiful char to the final presentation.

A gourmet take on a simple ingredient: Guntur Chili Corn Lagsana with Achappam. This dish combines the heat of Guntur chili with the sweetness of corn, served on a crispy, flower-shaped achappam for a delightful texture.

Chaat with a twist. For this dish, we used crispy fried okra instead of the usual papdi as a base, offering a unique texture and flavour to the classic Indian street food.
