My Tawa Chaap is prepared right on the flat griddle, never pre-made. When you order, I toss the marinated soya pieces with fresh onions, tomatoes, and Desi Ghee until they soak up all those spices. You will taste the difference in the texture because I do not believe in quick-fix frozen preparations.
Delhi street food is not just about the taste; it is about the experience. Whether it is the slight char on the Paneer Tikka or the rich, creamy texture of my Malai Chaap, I ensure every portion hits the spot. My Tawa Chaap starts with premium soya pieces that are marinated in a blend of traditional spices. Unlike others, I cook these on a high-heat flat griddle with a generous amount of Desi Ghee. This creates that distinct smoky flavour that makes street-style food so addictive.
For the Malai Chaap, I use a cashew and cream base that makes the gravy thick and velvety. Pair this with our soft Rumali Roti and fresh Sirka Pyaz, and you have the perfect midnight feast. I also take care with my Paneer Tikka; each batch is yogurt-marinated and grilled with crunchy bell peppers. I do not use artificial colours or preservatives because the real taste comes from the spices and the cooking technique itself. If you are ordering late, do not worry about the quality. I cook every single plate fresh, so you get the same quality at 2 am as you would for dinner.
