Here's how I prepare my Dahi Bhalla, a refreshing and beloved chaat. Soft lentil dumplings are soaked and then generously topped with whipped yogurt, sweet tamarind chutney, and a sprinkle of spices and pomegranate.

This video shows the process of making my Corn Pakodas from scratch. I use fresh corn, mix it into a spiced gram flour batter, and fry until crispy. They are a perfect snack for a rainy day or any time you want something crunchy.

You can't go wrong with classic, hot samosas. Mine have a crispy, flaky pastry and are filled with a spiced potato and pea mixture, served with a tangy tamarind chutney for dipping.
